A preferment is a starting mixture in which a portion of the flour is fermented with water and yeast before being added to the bread dough. This pre-fermentation gives the bread deeper aroma, good volume, and longer shelf life. Poolish, biga, and the sponge method are the main examples.
Where It's Used
“Before adding the preferment to the main dough, wait for it to foam and activate.”
