Poolish

poolish · pu-liş

akışkan kıvamda ön maya

Poolish is a fluid pre-ferment made by mixing equal amounts of flour and water with a small amount of yeast and letting it rest. Long fermentation gives bread depth of flavor and a more open crumb. It is often used in French breads such as baguettes.

Where It's Used

“Prepare the poolish the night before and let it ferment at room temperature.”
