Soufflé is a light dessert made by folding whipped egg whites into a base cream and baking until risen. In the oven, the air trapped in the whites expands and causes it to rise, then it deflates quickly once out of the oven. In French it means 'puffed, blown up' and it can be prepared sweet or savory.
