Melt the dark chocolate and butter together in a double boiler.
Whisk the eggs and sugar until foamy; fold in the melted chocolate and flour.
Divide the mixture among the molds; bake in a preheated oven until the edges are set and the center is still slightly runny, then serve immediately.
Allergen: contains wheat flour (gluten), egg, and butter/dairy. Important: Grease the molds thoroughly with butter and cocoa before putting them in the oven; if greasing is insufficient the soufflé will stick to the mold and fall apart when turned out.
Serve the soufflé within a minute or two of taking it out of the oven; if it waits, the runny center also cooks through and sets.
