Yeasted dough tastes better after a fridge rest because slow fermentation at a low temperature builds up more of the flavour compounds the yeast produces. During a fast rise at room temperature, the yeast mostly focuses on producing carbon dioxide, contributing relatively little to flavour.
What actually creates this flavour difference?
Yeast slowed down by the cold produces less carbon dioxide over the same period but spends more time producing organic acids and esters, the compounds behind aroma. These give the dough a lightly tangy, more complex flavour.
Over the longer rest, enzymes in the dough slowly break starch down into simple sugars; these sugars help the crust turn a deeper brown during baking and make the flavour taste richer.
The gluten network also relaxes and spreads out more evenly over this time; that is why products made from dough rested in the fridge are usually both easier to shape and give a lighter interior texture.
How is this technique applied at home?
After the dough is kneaded normally and left for its first rise, instead of leaving it at room temperature it is sealed tightly and put in the fridge; a rest of roughly twelve to twenty-four hours is usually enough to create a noticeable flavour difference.
Since the dough is usually cold when it comes out of the fridge, it is left to come back to room temperature before baking; otherwise the oven's heat takes too long to reach the correct temperature at the centre of the dough.
This technique is not limited to bread dough; pizza dough and some pastry doughs are also improved in both flavour and texture by the same long, cold rest. In baking, this technique is generally known as "cold fermentation".
The resting time cannot be stretched indefinitely; a cold rest longer than about forty-eight to seventy-two hours usually pushes the flavour past pleasantly tangy into something closer to sour and alcoholic, and the gluten network can also relax too much and weaken the dough's structure. That is why most recipes suggest an upper limit.
Dough planned for a long cold rest usually uses less yeast than a standard recipe; the point is to keep it from over-rising in the fridge and deflating before it even reaches the oven. Less yeast gives a slow but controlled rise.
The fridge does not stop yeast completely, it only slows it down a great deal; yeast stays metabolically active even at low temperatures, just working at a much slower pace. That is why dough resting in the fridge keeps rising slowly the whole time, even if it is not obvious to the eye.
Another advantage of this method is flexible timing; since the dough is prepared ahead and rested in the fridge, baking day is left with only shaping and baking, which makes things easier especially when hosting guests. The dough can also be used in small portions over a few days rather than all at once, since dough resting in the cold stays usable for several days.
This method is not limited to home baking either; many professional bakeries use it as a standard practice, deliberately resting dough in the cold for a controlled depth of flavour rather than for daily freshness alone.
