Why Does Mozzarella Turn Rubbery When Overcooked?

Why does mozzarella melt so fast to begin with?

Fresh mozzarella, thanks to its short ageing time and high moisture content, softens quickly under heat; its protein network loosens and the fat and water inside become fluid. In this first stage the cheese takes on a smooth, flowing texture — exactly what is wanted on a pizza or in a melted sandwich.

What happens to the protein network as heat continues?

If heat keeps being applied past the melting point, milk proteins — casein in particular — tighten back up into a dense network. That tightening squeezes water out from between the protein chains; the cheese loses both water and fat, and what remains is a dense protein network that feels elastic and hard to chew.

Why does high heat raise the risk?

Mozzarella cooked on high heat heats up fast from the surface, and that protein tightening happens in a very short window, which makes it easy to miss the moment to pull it off the heat. On moderate heat, more controlled warming makes it easier to catch the cheese while it is still fluid.

Does shredded mozzarella behave differently from sliced mozzarella?

Does bringing mozzarella to room temperature first make a difference?

Mozzarella placed straight from the fridge onto a hot surface or into the oven heats up much faster on the outside than the inside, so the outer layer can tighten before the inside has even turned fluid. Letting the cheese sit at room temperature for about half an hour before cooking lets the heat spread more evenly through it and makes the fluid window easier to catch.

Does buffalo mozzarella behave differently from cow's milk mozzarella?

Mozzarella made from buffalo milk usually holds more moisture, which makes it somewhat more forgiving under heat; standard cow's milk mozzarella holds less moisture and tends to tighten up faster over the same amount of time. That difference can mean adjusting the oven time by a couple of minutes depending on which type tops the pizza.

Sandviçte mozzarella yerine biraz daha yağlı bir kaşar kullandığımda ısıtıcıda uzun kalsa da o kadar sertleşmiyor, ama mozzarellanın kendine has yumuşak dokusunu ve hafif tuzsuz tadını tam veremiyor açıkçası.

Rendelenmiş mozzarella yerine dilim mozzarelladan küçük parçalar koparıp kullanmaya başladım, kalın olduğu için fırında birkaç dakika fazla kalsa bile o kadar hızlı sertleşmiyor, önceki pizzalarımda kenarları hep lastik gibi oluyordu.
