What to Do When Syrup Crystallizes (Turns Sugary)?

Syrup turning grainy and cloudy usually comes from stirring while it boils, or from skipping the acid (like lemon juice) that keeps it smooth; the fix is putting it back on the stove with a little water and a few drops of lemon juice, and this time leaving it alone while it simmers.

Why does syrup crystallize?

Sugar dissolves fully in boiling water at first, forming a clear liquid; but if it gets stirred with a spoon while boiling, or if sugar splashed onto the pan's sides drips back in, those stray crystals act like a seed and trigger the whole batch to crystallize rapidly. That is why syrup should just be swirled gently in the pan rather than stirred once it starts boiling.

The other culprit is missing acid: a little lemon juice or vinegar converts some of the sugar molecules into invert sugar, which makes crystal formation much harder. A syrup made with nothing but water and sugar has no such protection, so it crystallizes far more easily.

How can you tell syrup has crystallized?

Syrup that should be clear and smooth turns cloudy once it crystallizes, develops a fine grainy texture, and instead of spreading smoothly over a dessert it leaves a sandy film. Sometimes a hard, stone-like layer even forms at the bottom of the pan.

How do you fix it?

Crystallized syrup goes back onto the stove with a few tablespoons of water added, then warms gently; the heat slowly dissolves the crystals and the syrup clears up again. Adding a few drops of lemon juice at this point speeds up the dissolving and lowers the odds of it crystallizing a second time.

Avoid stirring while it simmers — just swirl the pan gently when needed. Once the syrup reaches the right consistency, take it off the heat and let it rest; it will look thinner than expected while hot and thicken as it cools, so it is fine to pull it slightly runnier than the final texture you want.

How do you keep it from crystallizing again?

Wiping down sugar splashes on the pan's sides with a wet brush or damp paper towel while the syrup boils keeps those stray crystals from falling back in and seeding the batch. Adding a pinch of citric acid or a few drops of lemon juice from the start is a lasting fix too.

Letting the syrup rest covered at room temperature after boiling also cuts down on the crystallization that sudden temperature swings can cause — syrup poured hot straight into the fridge cools too fast and turns sugary more easily.

Does the same method work for every dessert?

For desserts like baklava or künefe, where hot syrup gets poured directly over a hot dessert, keeping the syrup fluid matters a lot, since crystallized syrup will not spread evenly and can leave dry patches at the edges. For syrup-soaked cookies or lokma, the syrup is usually kept a bit thicker to begin with, so a slight cloudiness is less noticeable, though nobody wants that gritty texture either way.

Thicker syrups closer to jam or molasses carry a somewhat higher crystallization risk than a regular syrup, simply because their sugar content is higher; adding lemon juice or a little glucose syrup while it simmers is a common trick for holding off crystallization in those thicker batches.
