How to make it?

Steep the tamarind

Put the tamarind into a container with hot water, cover, and leave at room temperature for at least 8 hours.

Mash and strain

Mash the soaked tamarind thoroughly by hand to mix its pulp into the water, then strain it through a fine sieve.

Sweeten and chill

Add sugar to the strained water and mix thoroughly; if you like, balance the tartness with lemon juice and chill in the refrigerator.

Reminder

Important: Don't forget to remove the seeds while soaking the tamarind in water, as they can leave a bitter taste if crushed. Caution: add sugar gradually while sweetening the syrup and adjust to taste, as the sourness varies by fruit.
