Why Does Salmon Release White Foam When Cooked?

The white foam that shows up on salmon while it cooks comes from a protein in the fish called albumin. When it meets heat, albumin coagulates quickly and seeps out between the fish's muscle fibers, forming a foamy white layer on the surface.

This foam tends to show up more on salmon cooked fast at high heat or overcooked past its point; the higher the heat, the faster and heavier the albumin pushes out. Salmon cooked slowly at lower heat usually produces far less of it.

Is the white foam actually a problem?

It may look off-putting, but it doesn't mean the fish has gone bad or turned out poorly; it's a completely natural protein reaction and doesn't change the taste at all. For most people who cook salmon, the appearance is the only real complaint.

How much foam shows up also varies from one piece to another; some cuts naturally carry more albumin than others, which is why the amount can differ every time you cook it.

Are there ways to cut down on the foam?

Cooking salmon at a medium-low heat for a shorter time noticeably cuts down on foam; watching it at a gentler temperature works better than leaving it in a hot oven for too long. Some cooks also brine the fish briefly in salted water before cooking to reduce it further.

Even if foam does form, wiping it off gently with a paper towel or setting it aside on the plate is enough; it has no real effect on the fish's flavor or texture either way.

Does this foam show up on other fish too?

Albumin foam isn't unique to salmon at all; it shows up in a similar way on many fish, including tuna, sea bass, and sea bream. It's just more noticeable on salmon because the orange-pink color of the flesh contrasts strongly with white foam; on paler fish, the same foam is far less obvious.

Cooking previously frozen salmon after thawing can also increase the amount of foam; the freeze-thaw process puts some stress on the cell structure, which makes it easier for albumin to escape during cooking. Fresh salmon usually produces a bit less.

Patting the surface dry with paper towel before cooking can also help reduce, even if it doesn't fully prevent, the foam; extra surface moisture helps the albumin that meets the heat escape more quickly.

Eliminating foam entirely isn't realistic in practice; every piece of salmon has some albumin in it, and heat pushes at least some of it out. The goal isn't to erase the foam completely but to keep its appearance at an acceptable level.

Steaming salmon usually produces less foam than baking or pan-frying it; the moist environment of steam makes the heat transfer gentler and reduces how forcefully the albumin gets pushed out.

Salting salmon lightly and letting it sit for about ten minutes before cooking can firm up the protein structure a bit and reduce foam; this technique is sometimes called a dry brine.

Somonu kılçıklarını ayıklamadan mı yoksa ayıkladıktan sonra mı pişirmek köpük miktarını etkiler, yoksa bu tamamen balığın kendi albümin oranı gibi doğal yapısıyla mı ilgili, hiç emin olamadım?

Fırını yüksek ısıya alıp somonu hızlıca pişireyim derken yüzeyi neredeyse tamamen beyaz köpükle kaplandı, tadı bozulmadı ama tabakta hiç iştah açıcı görünmüyordu, bir daha ısıyı düşük tutacağım.
