At What Temperature and How Long Does Milk Take to Boil?

Milk boils at roughly 100°C, just like water, but it starts foaming up and overflowing in the pot at a much lower point, around 82-90°C. The reason is the thin protein skin that forms on its surface as it heats; that skin traps rising steam underneath for a moment and then suddenly puffs up and spills over.

Heating a pot of milk over medium-low, stirring constantly, both prevents it from boiling over and keeps it from catching on the bottom; a litre of milk handled this way usually reaches boiling in about 8-10 minutes.

Why does milk boil over, and how do you avoid it?

The real cause of boiling over is that the surface skin will not let steam through; as it builds up, the pressure rises until the skin suddenly bursts and pushes foaming milk over the rim. A wooden spoon laid flat across the top of the pot, or frequent stirring over low heat, helps prevent this — the spoon physically breaks up the foam as it starts to rise.

Using a wide, shallow pot also helps, since the larger surface area lets steam escape more easily and puts less pressure on the skin.

How long should milk simmer to form a skin of cream?

For a thick skin of cream, once the milk boils, the heat is turned down and it is left to gently simmer for 25-30 minutes; over that time the fat and protein on the surface concentrate. Not stirring it often lets the layer thicken undisturbed.

Does pasteurised milk need to be boiled?

Pasteurised or UHT milk sold in shops has already been heat-treated during processing, so it can safely be drunk cold; boiling it is not required. When milk is warmed for a hot drink or a dessert recipe, around 60-70°C, well short of boiling, is usually enough — boiling it fully is a matter of habit or recipe preference rather than necessity.

What do you do once milk has boiled over?

Because spilled milk on a hot burner can scorch and leave a smell quickly, the burner should be turned off right away and the pot moved off the heat. Wiping up the spill while it is still warm removes it without leaving a mark; once it has cooled and dried, dampening it with a little soapy water and letting it sit for a few minutes makes cleanup much easier.

Do different types of milk boil in the same time?

Full-fat milk heats up slightly more slowly than skimmed milk because fat does not conduct heat as fast as water; in practice the difference is no more than 1-2 minutes. Goat's milk forms a thinner protein skin than cow's milk, so it can boil over more suddenly and more easily, which is why it is especially important not to step away from the stove with it.

Plant-based milks (soy, almond, oat) generally foam up less and carry a noticeably lower boil-over risk than dairy milk, though some oat milk brands tend to stick to the bottom of the pot when heated.

Does heating milk in the microwave work differently?

Boiling milk in the microwave is riskier than on the stovetop because the temperature rise cannot be watched directly; it can look perfectly still and then suddenly boil over. A cup of milk usually approaches boiling in about 1-2 minutes, which is why it should be heated in 30-second bursts with a check after each one.

Leaving the cup uncovered in the microwave and never filling it more than a third full are two simple ways to cut the boil-over risk.
