How Many Minutes Does a Cinnamon Stick Need to Simmer to Release Its Flavour?

Simmering a cinnamon stick in liquid — milk, water or syrup — usually takes about 10-15 minutes before the flavour comes through clearly. A shorter simmer gives a faint hint, but cinnamon's real sweet-spiced note only shows up fully by the end of that window.

Why does it take that long?

Cinnamon's aroma sits in volatile oils inside the bark, mainly cinnamaldehyde, and those oils take time to dissolve into water. A whole stick releases flavour more slowly than ground cinnamon because, as long as the bark stays intact, the oils can only diffuse out from the surface.

Keeping the liquid at a simmer (around 100°C, a touch lower in milk) throughout speeds up how fast the flavour comes out; but leaving it simmering for too long can leave a slightly bitter edge.

How many sticks should you use?

One or two medium sticks per litre of liquid is plenty; more than that adds bitterness rather than concentrating the flavour. The sticks should come out once simmering is done — left in, they keep flavouring the liquid as it cools and the drink ends up darker-tasting than intended.

Is ground cinnamon any different?

Ground cinnamon flavours a liquid within seconds thanks to its large surface area, but it settles and clouds the liquid, so a stick is the better choice for a clear drink or syrup. Ground cinnamon is usually stirred in near the end of cooking, while a stick goes in from the start.

Does it behave differently in milk-based drinks?

Cinnamon simmered in milk takes a bit longer than in water — 15-20 minutes — to give its full flavour, since milk's proteins and fat slow how fast the volatile compounds spread compared to water. Stirring often while it simmers also keeps the milk from catching on the bottom.

Is there a way to speed up the flavour?

Lightly crushing or snapping the stick before simmering exposes more of the inner surface to the liquid, bringing the flavour out faster, in about 8-10 minutes. With this method, though, small bark fragments need straining out through a fine sieve once simmering is done.

Does a stale stick make a difference?

A cinnamon stick that's been stored for a long time and lost its smell won't give as strong a flavour in the same simmering time, even if you follow the timing exactly — you'll need either a few extra minutes or an extra stick. A fresh stick is one that still smells sharp and sweet when snapped.
