How Many Minutes Should Yufka Dough Rest Before Rolling?

Yufka dough should be covered with a damp cloth and rested at room temperature for 30-45 minutes after kneading; that rest lets the gluten relax, making the dough much easier to roll thin.

Why Does Resting Matter So Much?

Freshly kneaded dough has a tight, springy gluten network; trying to roll it out at that stage means it keeps pulling back and resisting thinning. During the rest, the gluten relaxes and the dough becomes stretchy enough to roll out paper-thin.

What Happens If You Roll It Without Resting?

Dough rolled without resting tends to tear often and starts resisting before it reaches the thinness you want; in that case, gather it back up and rest it for another 15-20 minutes. Forcing it leaves an uneven thickness across the sheet.

Cling film works just as well, but cloth breathes more and keeps the dough from sweating underneath it. The cloth itself should be lightly dampened too, since a dry cloth can pull moisture from the surface of the dough and let it form a skin.
