The foundation of adobo, the Philippines' best-known dish, this sauce is made by simmering vinegar, soy sauce, bay leaf and black peppercorns until thickened. It can be frozen in a jar or bag, ready to thaw when needed.
Boil the vinegar in a wide saucepan, uncovered, over medium heat for 5 minutes to soften its sharp smell.
Add the soy sauce, bay leaf, black peppercorns, garlic, brown sugar and water to the pan and stir.
Simmer over low heat for 30 minutes, stirring occasionally, until slightly thickened.
Cool the sauce at room temperature and remove the bay leaf. Transfer to a jar or freezer bag and store in the freezer.
