A refreshing street drink in Mexico, agua de Jamaica is made by steeping dried hibiscus flowers in boiling water, straining them, and sweetening the drink with lemon. It contains no dairy and can be poured into a bottle to take along.
Bring the water to a boil in a pot. Remove it from the heat and add the dried hibiscus flowers.
Let the mixture steep for 10 minutes, then strain it to remove the flowers.
Stir the sugar and lemon juice into the warm tea. Chill it in the refrigerator and serve over ice.
Do not keep boiling the steeping water. Add the flowers to freshly boiled water and remove the pot from the heat; prolonged boiling can increase the flowers’ tart tannins and leave a bitter taste. No known allergens are listed for this recipe.
