A low-sugar jarred preserve made by briefly roasting tart Japanese ume plums in an air fryer, then simmering them with sugar.

How to make it?

Roast the Plums

10 min

Arrange the pitted ume plums in the air fryer basket and roast at 180°C / 355°F for 10 minutes. If you do not have an air fryer, roast them in the oven for the same amount of time.

Simmer with Sugar

20 min

Transfer the roasted plums to a pot. Simmer over low heat with the sugar and lemon juice for 20 minutes, until thickened.

Jar and Cool

30 min

Transfer the hot mixture to a sterile jar and let it cool at room temperature for 30 minutes.

Reminder

If you do not have an air fryer, roast the plums in an oven at 180°C / 355°F for the same amount of time.
