Boil the pasta

This hearty casserole is made by tossing pasta with a rich sauce of Kashar and processed cheese, then baking it with breadcrumbs. A classic American family favorite, it comes together with a handful of ingredients.
Boil the pasta in plenty of salted water for 1–2 minutes less than the package directions, then drain. Do not cook it until fully tender, since it will bake again.
Melt the butter and stir in the flour. Cook for 2 minutes, then gradually pour in the milk while whisking constantly. Once thickened, remove from the heat and stir in the Kashar cheese, processed cheese, mustard powder, salt, and black pepper.
Toss the cooked pasta with the cheese sauce and transfer to a greased baking dish. Sprinkle with the breadcrumbs mixed with melted butter and, if desired, ground red pepper for color.
Bake in a preheated oven until the top is golden and lightly crisp. Watch it closely during the final minutes, as the breadcrumbs can brown quickly.
Add the milk gradually while whisking the cheese sauce constantly to prevent lumps. Let the casserole rest for a few minutes after baking so the sauce holds together when served. Allergen: contains dairy and wheat (gluten).
