Blend the cooked apricots with their cooking liquid until smooth.
Strain the mixture through a fine-mesh strainer to remove pieces of skin. Add the sugar and lemon juice, if desired, and stir.
Chill the apricot juice in the refrigerator and serve over plenty of ice.
Caution: There is no need to peel the apricots after removing the pits; the skins will separate during straining after cooking.
