This no-cook Armenian mezze is made by mashing leftover canned or cooked dried beans with olive oil, lemon, and garlic. It comes together in minutes without turning on the stove, and can be divided into small portions and frozen.

Mash the beans in a bowl with a fork or food processor. Add the olive oil, lemon juice, crushed garlic, salt, and black pepper. Blend until smooth but still slightly textured.
Transfer the dip to a bowl and sprinkle with parsley. Divide any remaining dip into small containers and freeze.
Drain and rinse the beans well before mashing; otherwise, the dip may release excess liquid. Thaw a frozen portion in the refrigerator and stir it well before serving.
