Roast the eggplants

A classic on Egyptian meze tables, this dip is made by mashing roasted eggplant with tahini, garlic and lemon. It keeps for a long time in the freezer, so it can be made ahead for parties.
Roast the eggplants in an oven preheated to 220°C / 430°F for twenty-five minutes, until the skins wrinkle and the flesh is soft.
Peel the eggplants and leave to drain for ten minutes.
Mash the eggplant flesh with a fork, mixing in the tahini, garlic, lemon juice and olive oil.
Sprinkle with parsley, adjust the salt and serve.
Turn the eggplants occasionally while roasting, or one side may burn too much and become bitter. Allergens: contains sesame (tahini).
