Cook the Chickpeas

Balila is a simple Saudi Arabian appetizer of chickpeas softened in a pressure cooker and served warm with cumin, lemon, and olive oil. Since it can be cooked ahead and frozen, it is a handy snack to keep on hand.
Place the chickpeas soaked overnight in a pressure cooker and cover with plenty of water. Secure the lid and cook for 25 minutes after it comes to pressure.
Release all the steam from the cooker and open the lid. Check that the chickpeas are tender.
Mix the drained chickpeas with the crushed garlic, cumin, lemon juice, and olive oil.
Divide the chickpeas among bowls while warm, sprinkle with ground red pepper, and serve.
Be sure to soak the chickpeas in water overnight before putting them in the pressure cooker; unsoaked chickpeas will not soften fully in the same amount of time.
