A favorite hot meze from Damascus, batata harra is made by roasting diced potatoes in olive oil, then tossing them with garlic, cilantro and Turkish red pepper flakes. It is just as tasty at room temperature, making it a handy dish to take on a picnic.

How to make it?

Roast the potatoes

Toss the diced potatoes with the olive oil, salt and black pepper in a bowl and spread in a single layer on a baking pan. Roast in an oven preheated to 200°C / 390°F for 30 minutes, turning occasionally, until golden.

Make the sauce

5 min

While the potatoes cook, mix the crushed garlic, chopped cilantro, Turkish red pepper flakes and lemon juice in a small bowl.

Mix and serve

2 min

Toss the hot roasted potatoes thoroughly with the garlic dressing. Leave to rest for 2 minutes, then serve warm or at room temperature.

Reminder

Do not crowd the potatoes on the baking pan, or they will steam rather than brown. Use two trays if necessary.

Evde kişniş sevmeyen biri var, maydanozla değiştirsem sosun tadı çok mu değişir yoksa yakın bir sonuç mu çıkar? Ayrıca fırın yerine tavada kavurarak yapmak 30 dakikalık pişirme süresini kısaltır mı?

Ben tepsiye kalabalık dizdim, patatesler buharda kaldı ve 30 dakikada istediğim kadar kızarmadı; ikinci tepsiye ihtiyaç oldu. Sarımsaklı sos gerçekten güzel ama pişirme kısmına dikkat etmek lazım.
