Cold baklava is a Gaziantep dessert made by soaking the baked pastry in sweetened warm milk instead of sugar syrup, then chilling it. Milk softens the pastry rather than firming it like syrup, giving it a texture closer to tres leches cake than baklava. Add the milk gradually: pouring it all at once will make the bottom layer soggy.

How to make it?

Prepare the pistachios and butter

Coarsely chop the pistachios with a knife. Melt the butter, let it stand for 3 minutes, then skim off the clear butter, leaving the white solids at the bottom. The solids will darken in the oven, and their burnt flavor is more noticeable in a milk-based dessert.

Layer the pastry

Brush a greased baking pan with butter and layer half the phyllo sheets, brushing butter between each sheet. Spread all the pistachios evenly, then layer the remaining sheets the same way. Pull the top sheet taut and tuck the edges inward.

Cut the baklava

With a sharp knife, cut lengthwise and then diagonally to make diamond-shaped pieces, pressing the blade to the bottom of the pan each time. Drizzle the remaining clarified butter into the cuts. Cutting before baking is essential; the layers separate when you cut the baked pastry.

Bake

45 min

Bake in an oven preheated to 180°C / 355°F, on the lower rack for 25 minutes and then the middle rack for 20 minutes. It is done when the cuts have opened, the layers are visibly distinct, and the top is copper-colored.

Prepare and gradually add the milk

Bring the milk and sugar to a boil, stirring until the sugar dissolves completely. Ladle the milk over the hot pan as soon as it comes out of the oven, waiting 20 seconds after each ladleful to let it absorb. Stop when milk begins to pool on the surface and set the rest aside; after 10 minutes, the pan may absorb another ladleful.

Reminder

After absorbing the milk, the tray must chill in the refrigerator for at least 4 hours before serving; this time is not included in the recipe duration. If cut too early, cold baklava will not hold its shape and will need to be served with a spoon.
