This Cuban papaya preserve, known locally as dulce de fruta bomba, is made by simmering ripe papaya with cinnamon and cloves, then balancing the sweetness with lemon juice. Serve it at breakfast with white cheese or crackers.
Peel and seed the ripe papayas, cut them into cubes, and mix with the lemon juice.
Toss the diced papaya with the granulated sugar, cover, and let it rest for 10 minutes so the papaya releases its juices.
Bring the papaya and its sugary juices to a boil over medium heat with the cinnamon stick and cloves. Cook for 25 minutes, stirring occasionally, until thickened to a jam-like consistency.
Fill sterilized jars with the hot preserves, turn them upside down, and let them cool to create a vacuum seal. When stored in a dark place at room temperature, the preserves will keep for several months.
