Bring the sugar, water, and lemon juice to a boil. Add the apricots and cook over low heat, skimming off the foam, until the syrup thickens.
If you start boiling the apricots before soaking them in water for at least 3 hours, they may stay firm and will not absorb the syrup well. Contains tree nuts (almonds).
