Fava is a simple yet hearty classic on Cairo tables, made by boiling soaked dried fava beans until tender and mashing them with olive oil, garlic, and lemon. This dip is served cold and is a simple example of the olive oil dishes tradition.

Boil the Fava Beans

Drain the soaked fava beans and put them in a pot with fresh water. Bring to a boil, reduce the heat, and simmer for 25 minutes, until completely tender.

Mash and Combine

Mash the cooked fava beans with the onion, garlic, olive oil, lemon juice, cumin, and salt using a fork or blender.

Serve with Parsley

Spread the dip on a plate, sprinkle with parsley, and serve at room temperature.

Reminder

Skimming the foam while the fava beans boil gives the dip a cleaner color. If you serve it before it cools completely, its consistency may seem thinner than expected.

Kuru bakla bulamadığım için yerine kuru bezelye kullandım, kıvamı biraz daha pürüzlü oldu ama tadı fena değildi. Haşlama süresini de 25 dakikadan 35 dakikaya çıkarmam gerekti çünkü bezelye daha geç yumuşuyor.

Bezelye gerçekten iyi bir alternatif, sadece pürüzsüzlük için blenderdan biraz daha uzun geçirmenizi öneririm. Süreyi uzatmanız da doğru bir sezgiydi, kabuklu bezelye baklaya göre daha dirençlidir.
