Roast the vegetables

A specialty of Catalonia in Spain, escalivada combines roasted eggplants, peppers and onions, peeled and cut into strips, with plenty of olive oil. The smoothness of the oil balances the smoky vegetables. Served warm or cold, it is a simple dish for any season.
Roast the eggplants, red peppers and onions in a preheated oven until their skins blacken and the flesh is completely soft.
Transfer the vegetables to a covered container and leave to steam for 15 minutes to loosen the skins.
Remove the skins and seeds, then cut the flesh into thin strips.
Toss the strips with the garlic, olive oil, sherry vinegar and salt. Serve warm or cold.
Let the roasted vegetables rest in a covered container before peeling. The trapped steam makes the skins much easier to remove.
