Cook the cubed chicken breast in olive oil with salt and black pepper for 6 minutes, until browned on all sides. Set aside.
In the same pan, cook the onion, garlic, and red bell pepper until tender. Add the grated tomato and cumin. Return the chicken to the pan, cover, and simmer over low heat for 25 minutes, until the sauce thickens and the chicken is tender.
Toss the cooked spaghetti with the stew sauce, sprinkle with chopped fresh cilantro, and serve hot.
