Inspired by Ethiopia’s coffee ceremony, this recipe brews freshly ground coffee with cardamom and cinnamon in a cezve. Waiting for the grounds to settle is essential for a clear cup.
Boil the water in a cezve.
Add the ground coffee, cardamom, and cinnamon stick. Brew over low heat for 5 minutes.
Remove from the heat and let it stand for 10 minutes so the grounds settle to the bottom.
Slowly divide the clear coffee at the top among cups and serve.
Do not pour the coffee into the cups right away. Be sure to wait for the grounds to settle, or you may get grounds in every sip.
