A refreshing Jamaican drink, ginger beer is made by fermenting leftover ginger peels in sweetened water. This method uses peels that would otherwise be discarded, helping prevent food waste.

How to make it?

Make the syrup

Bring the ginger peels, sugar, and water to a boil and cook for 10 minutes.

Leave to ferment

20 min

Let the cooled mixture ferment at room temperature for 20 minutes in a jar with the lid loosely closed.

Strain and serve

5 min

Strain the mixture, add the lemon juice, and serve over ice.

Reminder

Do not seal the fermentation container tightly, or built-up gas may create pressure.

Kavanozun kapağını sıkıca kapattığım için mayalanma sırasında gaz birikti ve açarken köpürüp taştı, mutfağımın yarısı zencefil şurubuyla kaplandı. Kapağı gerçekten gevşek bırakmak gerekiyormuş, bunu bir sonraki denememde mutlaka uygulayacağım.
