Brewed from Sideritis in the mountainous regions of Greece, this traditional herbal tea can be made in a large pot for a crowd and stored in the freezer. Served without sugar, it is suitable for people with diabetes and can be offered hot or cold at large gatherings.
Bring the water to a boil in a large saucepan.
Add the dried mountain tea herb to the boiling water, reduce the heat and simmer gently for 3 minutes.
Turn off the heat, cover the pan and leave to steep for 15 minutes. Steeping for longer makes the tea bitter.
Strain the tea and pour into glasses. Add honey and a slice of lemon if you wish. Cool any remaining tea to room temperature and freeze in ice-cube trays.
Do not steep the herb for more than 15 minutes or the tea will become bitter. Freeze any extra tea in ice-cube trays, then add hot water whenever you want to make it into a drink again.
4 kaşık yerine 6 kaşık kuru ot kullanıp çayı biraz daha koyu demledim, bal eklemeden bile tadı yeterince zengindi. Ailemin en sevdiği kış içeceği oldu.
Misafirlerim gelmeden iki saat önce büyük bir tencerede demleyip termos kapta sıcak tuttum, herkes ikinci bardağını da istedi. Bal yerine küçük bir tutam tarçınla denedim, o da güzel gitti.
Sideritis otunu mahallede bulamadığım için editör notundaki gibi ıhlamur ve kekik karışımıyla denedim, demleme süresini de önerildiği gibi 10 dakikaya indirdim. Tadı orijinaline göre daha hafif kaldı ama yine de güzel bir bitki çayı oldu.
