Peel the Almonds
15 minRub the skins off the almonds, which have been soaked in water overnight, one by one with your fingers.
Halib louz is a silky almond milk made by soaking raw almonds in water overnight and straining them repeatedly through a fine cloth. Removing the skins and straining the mixture several times takes time, but produces a smooth drink without separated oil. Since it can be made without sugar, it is a diabetes-friendly drink to carry in a thermos to work or school in the morning.
Rub the skins off the almonds, which have been soaked in water overnight, one by one with your fingers.
Blend the peeled almonds with the water until you have a smooth white mixture.
Pour the mixture through a fine straining cloth. Slowly squeeze the pulp in your hand to extract all the milk; pass it through the cloth again if needed.
Stir the rose water and, if desired, cinnamon into the strained almond milk. Chill in the refrigerator before serving.
Take your time squeezing the straining cloth; if you squeeze the almond pulp too quickly, it will not release all its liquid and the drink will be watery. Allergen: contains tree nuts (almonds).
