The name means “he burned his finger”; according to the story, the cook burned a finger while tasting the dish. Green lentils, square-cut pasta, and pomegranate molasses cook together, then the dish is topped with crisp fried onions and plenty of fresh cilantro. It looks brothy in the pot but thickens as it rests; the lentils’ released starch, not flour, gives it body. Serve warm or at room temperature.

How to make it?

Boil the lentils

Put the rinsed lentils in 1.2 liters of cold water and bring to a boil. Skim off any foam, reduce the heat, and cook until the lentils can be crushed between your fingers. Do not drain them; the pasta will cook in the lentil water, whose starch helps thicken the dish.

Fry half the onions until crisp

15 min

Cut half the onion into paper-thin julienne strips. Heat the sunflower oil and fry the onion over medium heat, stirring occasionally, until deep golden. Remove with a slotted spoon and spread on paper towels. The onion will firm up and crisp as it cools; it is normal for it to look soft in the oil.

Soften the remaining onion and garlic

Finely dice the remaining onion and soften it in olive oil over low heat for 7 minutes. Add the minced garlic and ground coriander and cook for 1 minute, then stir in half the fresh cilantro. Transfer the mixture to the cooked lentils.

Cook the pasta in the lentil water

Add the pasta directly to the lentils and cook, stirring occasionally. If the lentil water has reduced too much, add hot water. When the pasta is tender to the bite, visible liquid should remain in the pot because it will be absorbed as the dish rests.

Thicken with pomegranate molasses

Add the pomegranate molasses, salt, and black pepper and cook over low heat for 6 more minutes. The dish should thicken enough to coat the back of a spoon; a trail drawn through it should remain visible briefly. Taste: it should be distinctly tangy. Add another 15 ml if needed.

Serve with crisp onions and pomegranate

Remove from the heat and let it cool until warm; harak osbao is eaten warm, not hot. Spread it on a large platter and top with the crisp onions, remaining fresh cilantro, and pomegranate seeds. Add the crisp onions just before serving so they do not absorb moisture and soften.

Reminder

Add the pomegranate molasses only after the lentils are completely tender. Acid added too early can toughen the lentil skins and keep them from softening.
