Hawthorn berry tea is made by first simmering dried berries gathered in the fall, then letting them steep. Hawthorn is firm and fleshy; simply steeping it like a leaf tea will not bring out its flavor, so it needs a brief boil. The tea is reddish amber, with a mildly tart, apple-like taste.
Rinse the dried hawthorn berries in cold water and drain them. Cut each berry in half with a knife; whole berries will not release their flavor into the water.
Put the hawthorn berries in a pot with 1.2 liters of water. Add the cinnamon stick if using, and bring to a boil. Cover and simmer over low heat for 10 minutes, until the water turns reddish.
Turn off the heat and let the tea steep with the lid on. Strain it through a fine-mesh strainer and divide it among cups. Do not press the berries in the strainer with a spoon, or the tea will turn cloudy.
After boiling, let the tea steep covered for 10 minutes; this resting time is not included in the recipe time. Store dried hawthorn in an airtight jar in a dry place for up to 1 year. If the berries become soft and sticky, they have absorbed moisture and should not be used.
