Knead the flour, eggs, and salt into a firm but pliable dough.
Wrap the dough and let it rest for 15 minutes.
Roll the dough as thin as possible and cut it into thin strips. Spread out the cut pasta and let it dry.
Boil the pasta in salted water for 4 minutes, then drain.
Toss the pasta with olive oil and lemon juice and serve warm.
Do not boil the pasta immediately after cutting it. Let it dry for at least 10 minutes, or it may fall apart in the water. Allergens: contains gluten (flour) and eggs.
