Georgia's traditional fermented milk drink, matsoni, is made by mixing warmed milk with a starter culture and leaving it to ferment for hours. Enjoyed without sugar, its naturally low carbohydrate content also makes it suitable for a ketogenic diet.

Leave the milk to cool for fifteen minutes, until lukewarm enough to dip your hand into comfortably.
Gently stir the matsoni starter into the lukewarm milk, taking care not to disturb the cream on top.
Leave the jar loosely covered in a warm place for at least eight hours, preferably overnight. It is ready when it has thickened and become smooth.
Chill the matsoni in the fridge and serve, sweetening with erythritol and vanilla if you like.
