Mayonnaise is an emulsion in which lecithin from the egg yolk holds oil suspended in water. Its thickness depends on how slowly the oil is added, not simply on how much you whisk. This recipe addresses the risk of raw eggs by using pasteurized eggs and makes the sauce by hand or with a whisk. Once it has emulsified, it can serve as the base for tartar sauce, cocktail sauce, and tuna sauces.

Whisk the yolks and mustard

Use pasteurized eggs because the raw egg in this sauce is not cooked; do not make this sauce with eggs whose packaging does not say pasteurized. Put the pasteurized egg yolks in a wide bowl and add the mustard and salt. Whisk until the yolks loosen and become a shade lighter. Place a damp towel under the bowl so it does not slip, leaving both hands free.

Add the oil drop by drop

Add the first 50 ml of oil truly drop by drop, without stopping the whisk. Once the mixture thickens and begins to hold the whisk’s trail, the emulsion has formed; from then on, you can drizzle in the remaining oil in a thin stream. This is the only stage where you need to take your time, and rushing it is the only reason the sauce breaks.

Add the acid and adjust the consistency

Once all the oil is incorporated, the sauce should cling to the back of a spoon and the trail from the whisk should remain visible. Add the lemon juice and stir; the sauce will become a shade lighter and slightly thinner. If it is too thick, loosen it with one tablespoon of warm water, then taste and adjust the salt.

Reminder

The eggs and oil must be at the same room temperature or the emulsion may not hold. Store the sauce in a sealed glass jar in the refrigerator, and discard it if its smell, color, or texture changes.
