This homemade soda becomes lightly fizzy as apple juice, sugar, and a small amount of yeast sit at room temperature for a few hours. It is a classic treat for children’s birthday parties and fits easily into a lunchbox once bottled.

Mix the apple juice and lemon juice with the yeast syrup. Pour into clean, capped bottles, leaving two finger-widths of headspace, and close the caps tightly.
Leave the bottles at room temperature in a spot out of direct sunlight for about 3 hours. The soda is ready when a bottle feels firm and resists squeezing.
Refrigerate the bottles for at least 2 hours. When opening, hold each bottle pointed away from yourself and open it slowly, as the pressurized drink may foam up.
Never fill the bottles to the brim; leave headspace for the gas to expand or the bottle may burst. If fermentation lasts longer than 3 hours, the soda will begin to sour. At that point, refrigerate it to slow fermentation.
