Cook and Strain the Tomatoes

Homemade tomato ketchup is made by slowly simmering fresh tomatoes with vinegar and spices for hours until thickened. Unlike store-bought bottled ketchup, it contains no preservatives and can be stored in the refrigerator for several weeks.
Boil the chopped tomatoes with the roughly chopped onion for 15 minutes, until tender. Press them through a sieve to remove the skins and seeds.
Pour the strained tomato liquid into a wide pot. Add the vinegar, granulated sugar, cinnamon, cloves, and salt. Simmer uncovered over low heat for 90 minutes, until thickened.
Once the sauce thickens, remove the cinnamon stick and cloves with a slotted spoon.
While the ketchup is hot, pour it into clean jars and seal the lids tightly. Let it cool at room temperature.
Do not cover the pot while simmering the sauce. If the steam cannot escape, the sauce may remain too watery before it reaches the right consistency.
