Hong dou tang is a Chinese sweet drink served hot, made by boiling red beans and dried longan with cinnamon and sweetening them with rock sugar. The longan's gentle honey aroma balances the earthy flavor of the beans and gives the drink depth.

Step by Step

How to make it?

1

Prepare the beans

5 min

Drain and rinse the red beans.

2

Boil the water

8 min

Bring the water, cinnamon stick and dried longan to a boil, then cook over low heat for 8 minutes.

3

Add the beans

10 min

Add the red beans and boil for another 10 minutes, until the mixture thickens slightly.

4

Sweeten and serve

2 min

Add the rock sugar and stir to dissolve. Remove the cinnamon stick and serve hot.

Reminder

Stir without crushing the red beans, or the drink will turn cloudy. Add the rock sugar at the end; adding it too early can slow the softening of the beans.
