Red hot peppers are simmered with apple and apple cider vinegar, then sweetened with erythritol instead of traditional sugar. This low-carb preserve can be spread on toast for breakfast or served alongside an appetizer platter.

Prepare the Peppers

Finely chop the red hot peppers and put them in a saucepan with the apple cider vinegar.

Simmer

20 min

Add the grated apple, erythritol, and salt. Simmer over low heat until the mixture thickens.

Fill the Jars

15 min

Fill clean jars with the jam while it is boiling hot. Turn the jars upside down and let cool.

Reminder

When filling the jars, sterilize the lids in boiling water first to reduce the risk of mold after opening. Store the jars in the refrigerator for 3 weeks or in the freezer for 6 months.

Elimde elma yoktu, yerine bir dilim armut rendeleyip kullandım; kıvam yine de kaşığın arkasında güzelce bağladı ama tat biraz daha hafif ve daha az ekşi çıktı.

Eritritolü bir defada tüm miktarı eklemek yerine azar azar tatmadan katınca reçel beklediğimden çok daha acı oldu, biberin tatlandırıcıyla dengelenmesi gerektiğini fark etmemiştim. Kavanozları açtığımda da üstte hafif bir sululuk vardı.

Haklısınız, eritritolün tatlandırma gücü şekerden farklı olduğu için azar azar eklemek daha güvenli; ben de tarifi bu şekilde güncellemeyi düşüneceğim. Sululuk konusunda kaynatma süresini biraz uzatmanız kıvamı daha da koyulaştırabilir.
