This preserve uses up dried barberries left over from Iranian barberry pilaf. Cooked gently, it balances the tartness of the tiny berries with sugar. Their small size and thin skins mean they need careful attention to reach the right consistency without burning.

Bring the sugar and water to a boil in a saucepan, stirring until the sugar dissolves completely.
Add the drained barberries, lemon juice and cardamom to the syrup. Cook over low heat, stirring constantly, until the berries soften and the syrup thickens.
Spoon the mixture into clean jars while hot, close the lids and leave to cool at room temperature.
Keep a close eye on the barberries as they cook and stir frequently. The tiny berries can stick to the bottom of the pan and turn bitter within seconds.
