Black tea boiled with cardamom, cinnamon and ginger is combined with coconut milk and saffron in this drink inspired by Iraq's spiced tea tradition. With no dairy milk or added sweetener, it is suitable for lactose-free and ketogenic diets.
Boil the water with the cardamom, cinnamon stick and ginger, covered, for 15 minutes.
Add the black tea to the boiling spiced water and remove from the heat. Cover and leave to steep for 10 minutes.
Strain the steeped tea and return it to the pan. Add the coconut milk and saffron and boil over low heat for another 35 minutes. Remove from the heat once concentrated.
Pour the tea into glasses. Use a flask to keep it hot in a lunch bag.
Keep the pan covered while boiling the spices, or their aroma will escape with the steam. Keep the heat low when adding the coconut milk; if it boils, the fat may separate and spoil the appearance.
