Boil the barley
60 minWash and rinse the barley thoroughly under running water. Put it in a large saucepan with 2 liters of water and bring to a boil. Reduce the heat and cook with the lid ajar for 60 minutes.
An old garden drink from Ireland and the neighboring islands, barley water is made by boiling barley for a long time, straining it and flavoring it with lemon zest. Chilled and served over ice, it is a refreshing, nostalgic summer classic.

Let the mixture reach room temperature, then chill in the fridge for at least 45 minutes. Serve with ice and fresh mint sprigs.
