This recipe gives Italian bruschetta a new layer by roasting zucchini in an air fryer. Lightly toasting the bread first keeps it from softening under the toppings.

How to make it?

Roast the Zucchini

Rub the zucchini slices with olive oil and salt. Roast them in the air fryer at 200°C / 390°F for 10 minutes.

Toast the Bread

Lightly toast the bread slices in the air fryer for 3 minutes.

Add the Toppings

Rub the bread with the garlic clove, then divide the roasted zucchini, mozzarella, and chopped tomato among the slices.

Finish

Heat in the air fryer for 2 more minutes to melt the cheese, then sprinkle fresh basil on top.

Reminder

Lightly toast the bread first; if you add the toppings to untoasted bread, it will quickly soften and fall apart. Allergens: contains wheat (gluten) and dairy (mozzarella).
