A Jamaican street-food favorite, this patty is made by filling curry powder-seasoned golden pastry with spicy ground meat and baking it. Care is needed to seal the rich, flaky layers without breaking them.
Mix the flour, curry powder, and salt. Rub in the cold butter with your fingertips until the mixture resembles coarse crumbs. Add the cold water and bring the dough together.
Cook the ground meat with the onion, hot pepper, and thyme in a skillet for 5 minutes. Stir in the breadcrumbs and let cool.
Roll the dough thinly and cut out circles. Place some ground meat filling on one half of each circle, fold over, and seal the edges firmly with a fork.
Bake the patties in an oven preheated to 200°C / 390°F for 18 minutes, until golden.
