This dish is made by pressure-cooking dried peas with carrots and tomato paste, then finishing it with olive oil. It is a convenient lunchbox option that does not require soaking the peas ahead of time. Serve warm or cold.

Step by Step

How to make it?

1

Sauté the vegetables

5 min

Sauté the onion in olive oil until translucent. Add the diced carrot and cook for 5 more minutes.

2

Add the ingredients

3 min

Add the rinsed dried peas, tomato paste, salt, black pepper, sugar, and water. Close the pressure cooker lid.

3

Pressure-cook

45 min

Once the pressure cooker starts hissing, cook over low heat for 35 minutes, then let the pressure release naturally for another 10 minutes.

4

Serve

5 min

Drain the peas, drizzle with another round of olive oil, and serve warm or cold.

Reminder

Because the dried peas are used without soaking, follow the cooking time closely or the centers may remain firm.
