A refreshing Jordanian fattoush salad made without turning on the stove: ready-made pita chips, seasonal vegetables and sumac are tossed with mint, lemon and plenty of olive oil. Finely chop the tomatoes, cucumber, green pepper, red onion, radish, parsley and mint.
Whisk the lemon juice, olive oil, sumac and salt together in a bowl.
Toss the chopped vegetables with the dressing and chill in the refrigerator for 20 minutes.
Just before serving, add the pita chips to the salad and toss once more.
