Thinly sliced zucchini replace traditional dumpling dough in this low-carbohydrate, low-calorie take on Turkish dumplings. The spiced ground meat filling cooks quickly in an air fryer. Garlic yogurt and a buttery sauce drizzled over the top keep the familiar character of the original dish.

How to make it?

Prepare the zucchini

Lightly salt the thin zucchini slices.

Draw out the moisture

10 min

Leave the salted zucchini slices for 10 minutes, then pat dry with paper towels. Slices that retain their moisture will tear during cooking.

Make the filling

Knead the ground beef thoroughly with the grated onion, parsley, Turkish red pepper flakes, salt and black pepper.

Roll up

12 min

Place a 5 ml measure of filling on each zucchini slice and roll up tightly. Arrange the rolls in the air-fryer basket, leaving space between them.

Cook in the air fryer

Set the air fryer to 200°C / 390°F and cook the rolls for 12 minutes. If you do not have an air fryer, bake them in an oven preheated to the same temperature for 18 minutes.

Serve with the sauce

Mix the strained yogurt with the crushed garlic and spoon over the rolls. Melt the butter, mix with Turkish red pepper flakes and drizzle over the top.

Reminder

If you roll the zucchini without drawing out their moisture, the rolls may open during cooking and the filling spill out. Do not skip the 10-minute salting step. Allergens: contains milk and dairy products.

Misafirlerim için ilk kez mantı yerine bu kabaklı versiyonu denedim, herkes hamursuz olduğuna inanmadı. Sarımsaklı yoğurdun üzerine gezdirdiğim tereyağını biraz fazla kaçırınca sos ağırlaştı, bir dahaki sefere ölçüyü kaşıkla tutturacağım.

Airfryer'da 12 dakika pişirdim ama ruloların ortası hâlâ hafif ham kaldı, dışı ise fazla kızardı. Kabak dilimlerini biraz daha ince kesmem ya da süreyi artırmam gerekiyormuş; tarifte yazan süre benim airfryer modelim için yeterli gelmedi.

Tereyağını sıvı yağ yerine zeytinyağıyla değiştirdim, üzerine gezdirdiğim sos daha hafif ama aynı derecede lezzetli oldu. Kabakları ince şeritler hâlinde kestim, kalın bıraktığım birkaç dilimde rulo yaparken kenarları çatladı, bu yüzden inceliğe dikkat etmek gerekiyor.

Zeytinyağı gerçekten hafif bir alternatif, deneyeceğim. İnce kesmenizin payı da büyük olmuştur; kalınlığı netleştirmediğim için bunu tarife ekleyeceğim.

Dana kıyma bulamadığım için editör notundaki gibi tavuk kıymayla yaptım, pul biberi de yarım tatlı kaşığına indirdim. Harç gerçekten daha hafif çıktı ama kabağın suyunu iyice almazsanız tavuklu harç dana kıymalıya göre daha çabuk suluyor, bunu ekleyeyim dedim.

Haklısınız, tavuk kıyma daha fazla su bıraktığı için kabağın suyunu almak bu versiyonda daha da kritik hâle geliyor; tuzlayıp bekletme süresini biraz uzatmanızı öneririm.
