Smooth, ripe mango combines with the natural gelling properties of chia seeds in this light, one-bowl mixture that needs no cooking. Sweetened with honey, it continues to thicken for a few hours in the fridge, so let it rest before serving.

How to make it?

Purée the mango

Peel the mango and mash the flesh with a fork or blend until smooth.

Mix with the chia seeds

Add the chia seeds, honey and lemon juice to the mango purée and mix well. Continue stirring occasionally for 5 minutes until the seeds are evenly distributed.

Leave to rest

2 min

Leave the mixture undisturbed for 2 minutes and check that it begins to gel, then transfer to a jar and refrigerate.

Reminder

Chia seeds begin to gel in the first 10–15 minutes but take at least 2 hours in the fridge to reach the right consistency. Serve too soon and the mixture will still be runny. For a fully vegan sweetener, replace the honey with the same amount of maple syrup.
