Marqa is a versatile Tunisian base sauce made by slowly cooking tomatoes and bell peppers with onion, garlic, and harissa until thick. It is common to make a large batch and store it in the freezer.

How to make it?

Saute the Onion and Peppers

Cook the chopped onion, bell pepper, and garlic in olive oil for 15 minutes, until softened.

Simmer Until Thick

Add the grated tomatoes, harissa, cumin, and salt. Cook over low heat for 40 minutes, until the sauce thickens.

Cool and Portion

Let the sauce cool completely, then divide it among freezer bags.

Reminder

Cook the sauce over low heat; high heat can quickly brown the outside while leaving the inside undercooked. If freezing, let it cool completely before portioning it into bags.
